Maple Glazed Apple Bundt Cake

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

¾ cup unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ cup sour cream

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

1 cup chopped walnuts or pecans (optional)

For the Maple Glaze:

1 cup powdered sugar

3 tbsp pure maple syrup

1-2 tbsp milk (to thin, if necessary)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan generously to prevent sticking.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.

          Incorporate Sour Cream: Mix in the sour cream until smooth. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix!

            Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.

              Bake the Cake: Pour the batter into the prepared Bundt pan and spread it evenly. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

                Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes. Then, carefully invert it onto a wire rack to cool completely.

                  Prepare the Maple Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, and just enough milk to reach your desired glaze consistency. The glaze should be pourable but not too runny.

                    Glaze the Cake: Once the Bundt cake is completely cool, drizzle the maple glaze over the top, allowing it to cascade down the sides. Let the glaze set for a few minutes before slicing.
