Maple Bourbon Sweet Potato Casserole – A Holiday Favorite!

4 medium sweet potatoes (about 2 lbs), peeled and cubed

1/4 cup unsalted butter, melted

1/2 cup pure maple syrup

1/4 cup bourbon

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup brown sugar

1 cup pecans, chopped (or walnuts, if preferred)

1 cup mini marshmallows (optional, for topping)

Prepare the Sweet Potatoes: In a large pot, add the cubed sweet potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and let cool slightly.

    Mash the Sweet Potatoes: In a large bowl, combine the cooled sweet potatoes with melted butter, maple syrup, bourbon, vanilla extract, cinnamon, nutmeg, and salt. Mash until smooth and well combined.

      Prepare the Topping: In a separate bowl, mix together the brown sugar, chopped pecans, and a pinch of cinnamon. If you want a marshmallow topping, skip this step and set aside the marshmallows.

        Assemble the Casserole: Preheat the oven to 350°F (175°C). Spread the sweet potato mixture evenly in a greased baking dish (about 9x13 inches).

          Add the Topping: Evenly sprinkle the brown sugar and pecan mixture over the sweet potato layer. If you're using marshmallows, make sure to add them at this stage, spreading them evenly over the pecan layer.
