4 medium zucchinis, sliced thinly

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup ricotta cheese

2 large eggs

1/2 cup diced onion

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1/2 cup crushed pork rinds (optional, for crunch)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.

    Sauté Vegetables: In a large skillet over medium heat, add olive oil. Sauté the diced onion and minced garlic until the onion becomes translucent, about 3-5 minutes.

      Prepare Zucchini: In a large bowl, combine the sliced zucchinis, sautéed onion and garlic, oregano, basil, salt, and pepper. Mix well to ensure the zucchini slices are evenly coated with the spices.

        Mix Cheeses: In another bowl, whisk together the ricotta cheese, eggs, and half of the mozzarella and Parmesan cheese until creamy and well combined.

          Layer the Casserole: In the prepared baking dish, spread half of the zucchini mixture evenly. Then, pour half of the cheese mixture over the zucchini. Repeat the layers with the remaining zucchini and cheese mixtures.

            Top with Crunch: If desired, sprinkle the crushed pork rinds on top of the casserole for added texture. Finish with the remaining mozzarella and Parmesan cheese sprinkled on top.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the top is golden and bubbly.
