Ingredients
  

2 live lobsters (1.5-2 lbs each)

4 cups fish or seafood stock

2 cups heavy cream

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, diced

1 cup corn kernels (fresh or frozen)

4 slices bacon, chopped

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Fresh lemon wedges (for serving)

Instructions
 

Prepare the Lobsters: In a large pot, bring a salted water to a boil. Add the lobsters and cook for 8-10 minutes until bright red. Remove the lobsters, let them cool, then extract the meat from the claws and tails. Chop the meat into bite-sized pieces and set aside. Reserve the shells.

    Cook the Bacon: In the same pot, add the chopped bacon and cook over medium heat until crispy. Remove the bacon and drain on paper towels, leaving the grease in the pot.

      Sauté Vegetables: Add olive oil to the bacon grease in the pot, then add diced onion and cook until translucent (about 5 minutes). Stir in minced garlic and cook for another minute until fragrant.

        Add Potatoes and Stock: Add the diced potatoes to the pot, pour in the fish or seafood stock, and bring to a simmer. Cook for about 15 minutes, or until the potatoes are tender.

          Mix in Corn and Cream: Once the potatoes are cooked, stir in the corn, heavy cream, dried thyme, paprika, salt, and pepper. Cook for an additional 5-7 minutes.

            Combine Lobster Meat: Gently fold in the chopped lobster meat and reserved lobster shells to infuse the flavors. Let it simmer for another 5 minutes to combine the flavors, but do not boil.

              Serve: Remove from heat. Discard the lobster shells. Serve the chowder hot, garnished with crispy bacon, fresh parsley, and a squeeze of lemon juice.
