Loaded Nachos with Cheese Sauce

Ingredients
  

1 bag of tortilla chips (about 12 oz)

1 lb ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 large jalapeño, sliced (optional)

1 cup cherry tomatoes, halved

1 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/2 cup pickled red onions (optional)

1 tsp garlic powder

1 tsp chili powder

Salt and pepper to taste

1 cup cheese sauce (store-bought or homemade)

Instructions
 

Cook the Meat: In a skillet over medium heat, add the ground beef or turkey. Season it with garlic powder, chili powder, salt, and pepper. Cook until browned and fully cooked, about 6-8 minutes. Drain excess grease if necessary.

    Prepare the Cheese Sauce: If making homemade cheese sauce, melt butter (2 tbsp) in a saucepan, add 2 tbsp flour to create a roux, slowly whisk in 1 cup milk, and then stir in 1 ½ cups of shredded cheddar cheese until melted and combined. Season with salt and pepper; set aside.

      Layer the Nachos: Preheat your oven to 350°F (175°C). On a large baking sheet or oven-safe platter, spread half of the tortilla chips. Evenly layer half of the cooked ground meat, black beans, corn, jalapeños (if using), cherry tomatoes, and both types of cheese.

        Repeat Layers: Add the remaining tortilla chips and top with the rest of the ground meat, beans, corn, jalapeños, and cheese.

          Bake: Place the loaded nachos in the preheated oven and bake for about 10-12 minutes or until the cheese is bubbly and golden.
