Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake

12 oz rotini pasta

1 lb ground beef

1 cup sweet corn (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup ranch dressing

½ cup cream cheese, softened

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

2 tbsp olive oil

Chopped green onions and additional cheddar for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and crumbly, about 5-7 minutes. Drain any excess fat, then season with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

        Combine Ingredients: In a large mixing bowl, combine the cooked rotini pasta, cooked ground beef, sweet corn, ranch dressing, cream cheese, and half of the shredded cheddar cheese. Mix until everything is well combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Prepare Topping: In a small bowl, mix the panko breadcrumbs with olive oil until well coated. Sprinkle the breadcrumb mixture evenly over the pasta bake. Top with the remaining shredded cheddar cheese.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the topping is golden brown.
