Loaded Cauliflower Bake

Ingredients
  

1 large head of cauliflower, cut into florets

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/2 cup sour cream

4 strips of bacon, cooked and crumbled

3 green onions, chopped (green parts only)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with non-stick spray.

    Cook the Cauliflower: In a large pot of boiling salted water, add the cauliflower florets and cook until tender but still firm, about 5-7 minutes. Drain well and allow to cool slightly.

      Prepare the Cheese Mixture: In a mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and creamy.

        Combine Ingredients: Add half of the cheddar cheese and half of the mozzarella cheese to the cream cheese mixture. Stir in the cooked cauliflower, crumbled bacon, and green onions, ensuring everything is evenly coated.

          Transfer to Baking Dish: Pour the cauliflower mixture into the prepared baking dish, spreading it out evenly.

            Top it Off: Sprinkle the remaining cheddar and mozzarella cheese on top.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and lightly golden.

                Garnish: Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
