Loaded Baked Potato with Steak Bites

4 large russet potatoes

1 lb sirloin steak, cut into bite-sized pieces

2 tbsp olive oil

Salt and pepper, to taste

1 cup shredded sharp cheddar cheese

1 cup sour cream

4 green onions, sliced

½ cup cooked crispy bacon bits

¼ cup fresh chives, chopped

2 tbsp butter

1 tsp garlic powder

½ tsp paprika

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Scrub the potatoes under cold water and poke several holes in each potato with a fork to allow steam to escape. Place them directly on the oven rack and bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.

    Cook the Steak Bites: While the potatoes are baking, heat olive oil in a large skillet over medium-high heat. Season the steak bites with salt, pepper, garlic powder, and paprika. Add the steak to the hot skillet in a single layer. Cook for about 3-4 minutes, turning occasionally, until cooked to your desired doneness. Remove from heat and set aside.

      Prepare the Toppings: In a small bowl, mix the sour cream with a pinch of salt and set aside. Prepare the toppings by frying bacon until crispy, then chopping it into bits. Slice the green onions, and chop the chives for garnish.

        Assemble the Loaded Potatoes: Once the potatoes are cooked, take them out of the oven and let them cool for a few minutes. Carefully cut each potato down the middle and gently push the ends to open them up. Add a tablespoon of butter to each potato, and then fluff the insides with a fork.

          Add Cheese and Steak: Sprinkle shredded cheddar cheese generously into each potato. Distribute the cooked steak bites evenly across the four potatoes.

            Top it Off: Spoon some of the seasoned sour cream over the top of each loaded potato. Finish with crispy bacon bits, sliced green onions, and chopped chives for an extra pop of flavor.
