2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1 cup fresh cilantro leaves, roughly chopped

1 small red onion, thinly sliced

1 jalapeño, seeded and finely chopped (optional)

Juice of 2 limes

2 tablespoons olive oil

1 tablespoon honey or agave nectar

Salt and pepper, to taste

For the Tacos:

8 small corn or flour tortillas

1 cup cooked protein of choice (e.g., grilled chicken, shrimp, or black beans)

½ cup crumbled queso Fresco (or cheese of choice)

Lime wedges, for serving

Instructions
 

Make the Slaw: In a large mixing bowl, combine the green cabbage, red cabbage, carrots, cilantro, red onion, and jalapeño (if using).

    Prepare the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, honey or agave, and a generous pinch of salt and pepper until well combined.

      Combine: Pour the dressing over the cabbage mixture and toss thoroughly to ensure everything is evenly coated. Taste and adjust seasoning as needed. Let it sit for about 15 minutes to allow the flavors to meld.

        Warm the Tortillas: While the slaw marinates, heat a skillet over medium heat. Warm the tortillas on both sides for about 30 seconds each, or until soft and pliable. Alternatively, you can warm them in a microwave covered with a damp paper towel for about 30 seconds.

          Assemble the Tacos: On each tortilla, place a generous spoonful of the cooked protein followed by a heaping portion of the lime cilantro slaw. Top with crumbled queso fresco.
