1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

½ cup buttermilk

2 tablespoons poppy seeds

Optional: Glaze (1 cup powdered sugar + 1-2 tablespoons lemon juice)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well mixed. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

        Add Eggs and Flavorings: Beat in the eggs one at a time, ensuring each is fully incorporated. Then add the lemon zest, lemon juice, and vanilla extract, mixing until combined.

          Alternate Dry and Wet Ingredients: Gradually add the dry ingredients into the wet mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined.

            Fold in Poppy Seeds: Gently fold in the poppy seeds until evenly distributed throughout the batter.
