Ingredients

1 lb chicken tenders

1 cup buttermilk

2 tablespoons lemon juice

2 teaspoons lemon zest

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

2 teaspoons freshly cracked black pepper

1 teaspoon salt

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon dried parsley (optional, for garnish)

Oil for frying (canola or vegetable)

Instructions

Marinate the Chicken:

    - In a large mixing bowl, whisk together the buttermilk, lemon juice, lemon zest, garlic powder, onion powder, paprika, black pepper, and salt.

      - Add the chicken tenders to the marinade, ensuring they're well-coated. Cover and refrigerate for at least 1 hour (or up to overnight for more flavor).

        Prepare the Breading:

          - In another bowl, mix the all-purpose flour, baking powder, and additional black pepper (1 teaspoon).

            - Make sure the flour mixture is evenly blended.

              Bread the Chicken:

                - Remove the marinated chicken tenders from the refrigerator. Let any excess marinade drip off, then dredge each tender in the flour mixture, pressing lightly to ensure they are well-coated. Shake off any excess flour and set aside on a plate.

                  Heat the Oil:

                    - In a deep frying pan or a large skillet, heat about 1 inch of oil over medium-high heat to 350°F (175°C). You can test the oil by dropping a small piece of bread in; if it sizzles immediately, the oil is ready.

                      Fry the Tenders:

                        - Carefully place the breaded chicken tenders in the hot oil. Do not overcrowd the pan; fry in batches if necessary.

                          - Cook for about 4-5 minutes on each side or until golden brown and fully cooked through (internal temperature should reach 165°F or 74°C).

                            Drain and Serve:

                              - Remove the chicken tenders from the oil and place them on a paper towel-lined plate to drain excess oil.

                                - Optional: Sprinkle with dried parsley for garnish and additional lemon zest for a fresh touch.

                                  - Serve hot with your favorite dipping sauce, such as ranch or a lemony yogurt dip.
