Ingredients

1 cup milk

1 cup granulated sugar

1/2 cup all-purpose flour

1/2 cup unsalted butter, melted

4 large eggs

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 teaspoon vanilla extract

1/2 teaspoon baking powder

Pinch of salt

Powdered sugar for dusting (optional)

Whipped cream for serving (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch pie plate or a similar baking dish.

Blend Ingredients: In a blender, combine milk, granulated sugar, flour, melted butter, eggs, lemon juice, lemon zest, vanilla extract, baking powder, and salt. Blend on medium speed until smooth and well combined, about 30-45 seconds.

Pour and Bake: Pour the blended mixture into the prepared pie dish. As it bakes, the magic happens! The batter will separate into a smooth custard layer on the bottom and a light cake layer on top.

Bake: Place the pie dish in the preheated oven and bake for 40-45 minutes, or until the top is lightly golden and the filling is set (it may wobble slightly in the center but will firm up as it cools).

Cool Down: Once baked, remove from the oven and let the pie cool at room temperature for about 30 minutes. Then refrigerate for at least 2 hours before serving to enhance the flavors and set the texture.

Serving: Dust with powdered sugar before slicing, if desired. Serve chilled or at room temperature with a dollop of whipped cream on each slice for a delightful finish.
