Lemon Herb Rice

1 cup long-grain white rice

2 cups vegetable broth

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

¼ cup fresh parsley, chopped

¼ cup fresh chives, chopped

Instructions
 

Rinse the Rice: Start by rinsing the long-grain white rice under cold water in a fine-mesh sieve for about 1-2 minutes until the water runs clear. This helps remove excess starch and prevents the rice from being sticky.

    Sauté Aromatics: In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

      Toast the Rice: Add the rinsed rice to the saucepan with the sautéed onions and garlic. Stir gently, toasting the rice for about 2-3 minutes, allowing it to absorb the flavors.

        Add Broth & Seasoning: Pour in the vegetable broth, lemon zest, lemon juice, dried oregano, and dried thyme. Season with salt and pepper to taste. Stir to combine.

          Bring to a Boil: Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid.

            Cook the Rice: Allow the rice to simmer on low heat for about 15-18 minutes or until all the liquid is absorbed and the rice is tender. Avoid lifting the lid during cooking.

              Fluff and Add Fresh Herbs: Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. Then, remove the lid and fluff the rice gently with a fork. Stir in the chopped fresh parsley and chives for a burst of freshness.
