Ingredients
  

1/2 cup unsalted butter, softened

8 oz cream cheese, softened

1/2 cup granulated sugar

1 cup powdered sugar, plus extra for dusting

1 large egg

1 teaspoon vanilla extract

1 tablespoon lemon zest (about 1 lemon)

2 tablespoons freshly squeezed lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, beat the softened butter and cream cheese together using an electric mixer until creamy and well combined.

      Add the granulated sugar and continue to beat until light and fluffy.

        Mix in the egg, then add the vanilla extract, lemon zest, and lemon juice until well incorporated.

          In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

            Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be sticky.

              Use a cookie scoop or tablespoon to drop generous dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.

                Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain slightly gooey. Do not overbake.

                  Once baked, let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                    Once cooled, dust the tops of the cookies with powdered sugar for an extra sweet touch.
