1 pound large shrimp, peeled and deveined

4 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon red pepper flakes (adjust for heat preference)

Salt and pepper to taste

1 teaspoon fresh parsley, chopped (plus extra for garnish)

1 head of butter or romaine lettuce, leaves separated

1 medium cucumber, thinly sliced

1 avocado, sliced

½ cup cherry tomatoes, halved

Optional: crumbled feta cheese (for garnish)

Instructions
 

Marinate the Shrimp: In a large bowl, combine the shrimp, 2 tablespoons of olive oil, minced garlic, lemon juice, lemon zest, red pepper flakes, salt, pepper, and chopped parsley. Mix well to coat the shrimp evenly. Cover and let marinate in the refrigerator for 15-20 minutes to allow the flavors to meld.

    Cook the Shrimp: Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the marinated shrimp (reserving the marinade for later). Cook the shrimp for about 2-3 minutes per side until they turn pink and opaque. Pour in the reserved marinade and cook for an additional minute, allowing the flavors to intensify and the sauce to slightly thicken.

      Prepare the Lettuce Wraps: While the shrimp is cooking, wash and dry the lettuce leaves gently. They should be pliable but sturdy enough to hold ingredients.

        Assemble the Wraps: On each lettuce leaf, place a few slices of cucumber, a couple of avocado slices, and a few halved cherry tomatoes. Top with several pieces of the cooked shrimp, drizzling a bit of the lemon garlic sauce over them.
