1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup cream cheese, softened

⅓ cup unsalted butter, melted

2 large eggs

½ cup plain Greek yogurt

1 tablespoon lemon zest (about 1 lemon)

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

Optional: ¼ cup powdered sugar for glaze

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Combine Wet Ingredients: In a large mixing bowl, beat the cream cheese until smooth. Add the melted butter, and sugar, and mix until well combined. Then, incorporate the eggs, Greek yogurt, lemon zest, lemon juice, and vanilla extract. Whisk until the mixture is creamy and no lumps remain.

      Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Be careful not to overmix – a few lumps are okay!

          Fill Muffin Tin: Using a spoon or ice cream scoop, fill each muffin liner about ⅔ full with batter.

            Bake: Place the muffin tin in the oven and bake for about 18-20 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.

              Cool & Glaze (Optional): Once baked, remove from the oven and allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. If desired, mix powdered sugar with a little lemon juice to create a glaze and drizzle over the cooled muffins.
