Lemon Butter Chicken Skewers

1.5 lbs boneless, skinless chicken thighs (cut into 1-inch cubes)

1/4 cup unsalted butter (melted)

3 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic (minced)

1 tablespoon fresh rosemary (chopped)

1 tablespoon fresh parsley (chopped)

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

Wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped parsley, honey, salt, black pepper, and smoked paprika. Whisk well to fully combine the ingredients into a smooth marinade.

    Marinate the Chicken: Add the chicken cubes to the marinade, making sure each piece is thoroughly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or up to 4 hours for a more intense flavor.

      Preheat the Grill: If using a grill, preheat it to medium-high heat (about 375-400°F). If using a grill pan, heat it on medium-high heat on the stove.

        Skewer the Chicken: Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking. Depending on the size of your skewers, you can add 4-6 pieces per skewer.

          Grill the Skewers: Lightly oil the grill grates or the grill pan to prevent sticking. Place the skewers on the grill and cook for approximately 10-12 minutes, turning occasionally until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The chicken should have a nice char and be golden brown.

            Serving: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve the skewers with a sprinkle of fresh chopped parsley and lemon wedges for an extra pop of flavor.
