1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 tablespoon lemon zest (about 1 lemon)

2 tablespoons fresh lemon juice

½ cup buttermilk

1 ½ cups fresh blueberries (or frozen, if fresh isn’t available)

2 tablespoons all-purpose flour (for tossing with blueberries)

For the Lemon Glaze:

1 cup powdered sugar

2 tablespoons lemon juice

1 tablespoon lemon zest

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

        Add Eggs & Flavor: Beat in the eggs, one at a time, ensuring each is fully incorporated. Then add the vanilla extract, lemon zest, and lemon juice, mixing until smooth.

          Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined (do not over-mix).

            Prepare Blueberries: In a small bowl, toss the fresh blueberries with the remaining 2 tablespoons of flour. This helps prevent them from sinking in the batter.

              Fold in Blueberries: Gently fold the blueberries into the batter with a spatula, being careful not to break them.

                Pour & Bake: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool Loaf: Once baked, allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Make Lemon Glaze: While the loaf is cooling, prepare the glaze by whisking together powdered sugar, lemon juice, and lemon zest in a small bowl until smooth.
