8 oz (one package) cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

Zest of 1 lemon

1 tbsp fresh lemon juice

1 cup fresh blueberries (or frozen, thawed & drained)

1/4 cup granulated sugar

1 tbsp cornstarch

1 tbsp fresh lemon juice

For the Danish Pastry:

1 sheet of puff pastry (thawed if frozen)

1 egg (beaten, for egg wash)

1 tbsp turbinado sugar (for sprinkling)

Instructions
 

Prepare the Cream Cheese Filling:

    - In a mixing bowl, beat the softened cream cheese until smooth.

      - Add powdered sugar, vanilla extract, lemon zest, and lemon juice. Mix until creamy and well combined. Set aside.

        Make the Blueberry Topping:

          - In a small saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, and lemon juice.

            - Cook until the mixture starts to bubble and thicken, about 5-7 minutes. Remove from heat and let it cool.

              Prepare the Puff Pastry:

                - Preheat your oven to 400°F (200°C).

                  - Roll out the puff pastry sheet on a lightly floured surface to smooth it out. Cut the pastry into a grid of 4 squares.

                    Assemble the Danishes:

                      - Place each pastry square on a parchment-lined baking sheet.

                        - Use a sharp knife to cut a border (about 1/2 inch from the edge) around each square, being careful not to cut all the way through.

                          - Score the inside square lightly with a fork to prevent it from puffing up too much when baking.

                            Fill with Cream Cheese:
