Ingredients
  

1 lb ground beef or Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

28 oz can crushed tomatoes

6 cups chicken or vegetable broth

2 teaspoons dried Italian seasoning

2 teaspoons sugar

Salt and pepper to taste

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

In a large pot over medium heat, brown the ground beef or sausage until fully cooked. Drain any excess fat.

    Add the chopped onion to the pot, cooking until it's translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

      Pour in the crushed tomatoes and broth, then add the dried Italian seasoning, sugar, salt, and pepper. Stir to combine.

        Bring the soup to a boil, then add the broken lasagna noodles. Reduce the heat to a simmer and cook for 10-12 minutes, or until the noodles are tender.

          In a small bowl, mix the ricotta cheese with a pinch of salt and pepper.

            Once the noodles are cooked, serve the soup hot, placing a dollop of the ricotta mixture and a sprinkle of mozzarella and Parmesan on top of each serving.

              Garnish with fresh basil before serving.
