Kielbasa Sheet Pan Meal

1 pound kielbasa, sliced into 1-inch pieces

2 cups baby potatoes, halved

2 cups broccoli florets

1 red bell pepper, sliced

1 yellow onion, sliced

3 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Pan: Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

      Mix the Vegetables: In a large mixing bowl, combine the halved baby potatoes, broccoli florets, sliced bell pepper, sliced onion, and minced garlic.

        Season the Veggies: Drizzle 2 tablespoons of olive oil over the vegetables. Sprinkle with smoked paprika, dried oregano, garlic powder, salt, and pepper. Toss everything well until the vegetables are evenly coated.

          Arrange on the Sheet: Spread the seasoned vegetables out in an even layer on one side of the prepared baking sheet.

            Add the Kielbasa: In the same bowl, add the sliced kielbasa. Drizzle with the remaining tablespoon of olive oil and toss to coat. Place the kielbasa pieces in a single layer on the other side of the baking sheet.

              Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and the kielbasa is browned.
