Ingredients

4 slices of sourdough bread

4 oz cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

2-3 fresh jalapeños, finely diced (adjust according to spice preference)

1/4 cup cooked bacon, crumbled (optional for added crunch)

2 tbsp mayonnaise

2 tbsp butter

1/4 tsp garlic powder

Salt and pepper to taste

Instructions

Prep the Jalapeños: Start by finely dicing the jalapeños. If you prefer a milder flavor, you can remove the seeds and membranes before dicing.

Mix the Cheese Filling: In a medium bowl, combine the softened cream cheese, shredded cheddar, shredded mozzarella, diced jalapeños, crumbled bacon (if using), garlic powder, salt, and pepper. Mix until well combined.

Assemble the Sandwich: Take two slices of sourdough bread and spread an even layer of the cheesy jalapeño mixture on each slice. Top with the remaining two slices of bread to create two sandwiches.

Prepare for Grilling: In a small bowl, mix the mayonnaise with a pinch of salt and spread it generously on the outside of both sandwiches. This will help achieve a golden, crispy crust.

Heat the Pan: Place a skillet or griddle over medium heat and add the butter, allowing it to melt and coat the surface.

Grill the Sandwiches: Carefully place the sandwiches in the heated skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Using a spatula, carefully flip the sandwiches and continue cooking for another 3-4 minutes until the other side is also golden and the cheese filling is melted.

Serve: Remove the sandwiches from the pan and let them cool for a minute before slicing them in half. Serve hot, perhaps with a side of ranch dressing or your favorite dipping sauce.
