1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1 cup buttermilk

2 large eggs

1/3 cup unsalted butter, melted

1 cup fresh or pickled jalapeños, chopped (adjust for spice preference)

1/4 cup honey

1/2 cup shredded cheddar cheese (optional, for added richness)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease an 8-inch square baking dish or a cast iron skillet.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk together until well combined.

      Whisk Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth. Add the honey to the mixture, incorporating it thoroughly.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it’s okay if there are still a few lumps. Be careful not to overmix.

          Add Jalapeños & Cheese: Fold in the chopped jalapeños and shredded cheddar cheese (if using) gently into the cornbread batter until evenly distributed.
