4 salmon fillets (skin-on preferred)

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1/2 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish

Optional: Lemon wedges for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Vegetables: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and let it sauté for about 1 minute until fragrant.

      Add Tomatoes and Spinach: Toss in the halved cherry tomatoes, stirring occasionally for about 3 minutes until they start to soften. Add the chopped spinach and sun-dried tomatoes, cooking until the spinach is wilted (approximately 2 more minutes).

        Create the Cream Sauce: Pour in the heavy cream and sprinkle with Italian seasoning, salt, and pepper. Stir the mixture gently, allowing it to simmer for 2-3 minutes until slightly thickened.

          Add Parmesan Cheese: Stir in the grated Parmesan cheese and mix it until fully incorporated into the sauce, creating a creamy consistency.
