1.5 lbs boneless, skinless chicken thighs (or breasts)

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

2 tablespoons honey

1/4 teaspoon black pepper

1/4 cup green onions, chopped (for garnish)

2 tablespoons sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the sweet chili sauce, soy sauce, sesame oil, minced garlic, grated ginger, rice vinegar, honey, and black pepper. Whisk until well blended.

    Add Chicken: Place your chicken thighs or breasts into the bowl with the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to overnight for deeper flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

          Bake the Chicken: Transfer the marinated chicken onto the prepared baking sheet. Reserve the leftover marinade for later use. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

            Glaze: While the chicken is baking, pour the reserved marinade into a small saucepan and bring it to a simmer over medium heat. Allow it to reduce and thicken for about 5-7 minutes, stirring occasionally.
