Ingredients
  

For the Dough:

4 cups all-purpose flour, plus extra for dusting

1/4 cup granulated sugar

1 packet (2 1/4 teaspoons) active dry yeast

1 cup whole milk, warmed (about 110°F)

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon salt

For the Filling:

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 tablespoons ground cinnamon

1/4 teaspoon ground nutmeg (optional)

1/4 cup chopped pecans or walnuts (optional)

For the Cream Cheese Glaze:

4 oz (half a block) cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (to thin, as needed)

Instructions
 

Prepare the Dough:

    In a large bowl, combine the warmed milk, sugar, and yeast. Allow to sit for about 5-10 minutes until it’s frothy. Stir in melted butter, eggs, vanilla extract, and salt.

      Mix the Ingredients:

        Gradually add the flour, one cup at a time, mixing until a soft dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until it’s smooth and elastic.

          First Rise:

            Place the kneaded dough into a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

              Prepare the Filling:

                While the dough rises, mix together the softened butter, brown sugar, cinnamon, nutmeg, and nuts (if using) in a bowl until well combined.

                  Roll Out the Dough:

                    Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 16x24 inches.

                      Add the Filling:

                        Spread the cinnamon filling mixture evenly over the rolled-out dough, leaving a small border around the edges.

                          Form the Rolls:

                                  Preheat and Bake:

                                    Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.

                                      Make the Cream Cheese Glaze:

                                        In a medium bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract. Add milk one tablespoon at a time until you reach your desired consistency.

                                          Glaze the Rolls:

                                            Once the rolls are out of the oven, let them cool for a few minutes before generously drizzling the cream cheese glaze over the top.
