Hot Honey Chicken Bowls

2 large boneless, skinless chicken breasts

1 cup cooked jasmine rice (or brown rice)

1 cup broccoli florets

1 red bell pepper, sliced

1 cup corn kernels (fresh, frozen, or canned)

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon onion powder

1/4 cup hot honey (store-bought or homemade)

1 tablespoon soy sauce

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: Slice the chicken breasts into bite-sized pieces. In a mixing bowl, toss the chicken with olive oil, garlic powder, paprika, onion powder, salt, and black pepper until evenly coated.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken pieces to the skillet and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Make sure the internal temperature of the chicken reaches 165°F (75°C).

      Add Veggies: In the same skillet with the chicken, add the broccoli floret and sliced red bell pepper. Stir-fry for about 4-5 minutes, until the vegetables are tender yet crisp.

        Mix Hot Honey Sauce: In a small bowl, combine the hot honey and soy sauce. Stir well until mixed. Pour this hot honey mixture over the cooked chicken and veggies in the skillet, combining everything until the sauce evenly coats the chicken and veggies. Cook for an additional 2 minutes.

          Assemble the Bowls: In serving bowls, layer the cooked jasmine rice as the base. Spoon the hot honey chicken and vegetable mixture over the rice.

            Garnish: Top each bowl with sliced green onions and a sprinkle of sesame seeds. Drizzle any remaining hot honey sauce over the bowls for extra flavor.
