Ingredients

2 cups elbow macaroni

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 cup honey

1 teaspoon soy sauce

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with black pepper, garlic powder, and smoked paprika. Cook for about 5-7 minutes or until the chicken is fully cooked and golden brown.

Make the Honey Sauce: In the last minute of cooking the chicken, pour in the honey and soy sauce. Stir well to combine and allow the chicken to caramelize slightly in the honey sauce for about 1-2 minutes. Remove from heat and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to create a roux. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk as the sauce thickens, about 5-7 minutes.

Add the Cheese: Once the sauce is thickened, reduce the heat to low and add the shredded cheddar and mozzarella cheese. Stir continuously until the cheese is completely melted and the sauce is smooth. Season with salt to taste.

Combine: In a large mixing bowl, combine the cooked pasta, honey pepper chicken, and cheese sauce. Stir gently until everything is well-coated and combined.

Serve: Transfer the Mac and Cheese to serving bowls or a large dish. Garnish with chopped parsley for a fresh touch.

Enjoy your delicious Honey Pepper Chicken Mac and Cheese!
