Honey Mustard Chicken Skewers

1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/4 teaspoon red pepper flakes (optional, for heat)

Prepare the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, apple cider vinegar, olive oil, minced garlic, smoked paprika, salt, black pepper, dried thyme, and red pepper flakes. Mix until well combined.

    Marinate the Chicken: Place the chicken cubes in a large resealable plastic bag or a glass dish. Pour the marinade over the chicken, making sure all pieces are evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

      Soak Skewers (if using wooden skewers): If you’re using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.

        Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F / 190°C to 200°C).

          Skewer the Chicken: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

            Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C) and has nice grill marks.

              Serve: Remove the skewers from the grill and let them rest for 5 minutes. Serve warm, optionally drizzled with extra honey-mustard sauce or a sprinkle of fresh herbs.
