4 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 teaspoon minced garlic

1 teaspoon fresh ginger, grated

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    In a medium bowl, whisk together the honey, lemon juice, lemon zest, soy sauce, Dijon mustard, minced garlic, and grated ginger. Season the chicken breasts with salt and pepper, then add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for better flavor).

      Preheat the Grill or Oven:

        If using a grill, preheat it to medium-high heat. If baking, preheat the oven to 375°F (190°C).

          Cook the Chicken:

            Remove the chicken from the marinade, reserving the marinade for later. If grilling, lightly oil the grill grates. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until internal temperature reaches 165°F (75°C). If baking, place the chicken breasts in a greased baking dish and bake for 25-30 minutes.

              Prepare the Glaze:

                While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce the heat and simmer for about 5-7 minutes, or until it thickens slightly.

                  Glaze the Chicken:

                    Once the chicken is cooked, brush a generous amount of the thickened glaze over each breast. Allow it to rest for 5 minutes to absorb the flavors.

                      Serve:

                        Place the glazed chicken breasts on a serving platter, drizzle with any remaining glaze, and garnish with freshly chopped parsley. Serve with steamed vegetables or a fresh salad for a complete meal.
