Ingredients

4 salmon fillets (about 6 oz each)

1 bunch asparagus, trimmed

1/4 cup honey

3 tablespoons soy sauce (low sodium)

2 tablespoons Dijon mustard

2 garlic cloves, minced

1 tablespoon olive oil

Salt and black pepper to taste

Lemon wedges, for serving

Fresh parsley or cilantro, chopped (for garnish, optional)

Instructions

Prepare the Marinade: In a small bowl, whisk together the honey, soy sauce, Dijon mustard, minced garlic, and a pinch of salt and black pepper until well combined. This will be your marinade and glaze.

Marinate the Salmon: Place the salmon fillets in a shallow dish or resealable plastic bag. Pour half of the marinade over the salmon, making sure it's well coated. Reserve the other half for glazing. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 1 hour for deeper flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy clean-up.

Prepare the Asparagus: Toss the asparagus with olive oil, salt, and black pepper in a medium bowl until evenly coated. Spread the asparagus out in a single layer on one side of the prepared baking sheet.

Arrange the Salmon: Remove the salmon from the marinade and place it on the other side of the baking sheet, skin side down. Brush the tops with some of the reserved marinade.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender. During the last 5 minutes of baking, brush the salmon with more of the reserved marinade for an extra glaze.

Serve: Remove the baking sheet from the oven. Serve the honey glazed salmon hot, alongside the roasted asparagus. Garnish with fresh parsley or cilantro and lemon wedges for a refreshing touch.

Enjoy: Squeeze fresh lemon juice over the dish before enjoying this sweet and savory meal!
