Ingredients

1 pound baby carrots (or chopped regular carrots)

3 tablespoons honey

2 tablespoons soy sauce (low-sodium, if preferred)

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh ginger, grated (optional for an extra kick)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: sesame seeds for topping

Instructions

Prepare the Carrots: If using regular carrots, peel and cut them into similar-sized pieces to ensure even cooking. Baby carrots can be used as they are.

Cook the Carrots: In a large skillet over medium heat, add the baby carrots and enough water to cover them halfway. Bring to a simmer and cook for about 5-7 minutes or until the carrots start to become tender.

Make the Glaze: In a small bowl, whisk together honey, soy sauce, garlic, and grated ginger until well combined. Set aside.

Sauté the Carrots: Once the carrots are tender, drain any excess water and add butter to the same skillet. Allow the butter to melt over medium heat.

Add the Glaze: Pour the honey garlic mixture over the carrots, stirring to coat them evenly. Increase the heat to medium-high and cook for 5-7 minutes, allowing the sauce to thicken and glaze the carrots, stirring occasionally.

Season: Season with salt and pepper to taste. If desired, sprinkle sesame seeds over the top and toss gently to combine.

Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve warm. Enjoy your sweet and savory honey garlic glazed carrots as a delightful side dish!
