4 boneless, skinless chicken breasts

1 cup cornbread mix

1 cup buttermilk

½ cup honey

¼ cup unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded sharp cheddar cheese

1 cup corn kernels (fresh, frozen, or canned)

2 green onions, finely chopped (for garnish)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a 9x13-inch baking dish by greasing it lightly with cooking spray or butter.

    Prepare the Chicken: Season the chicken breasts with garlic powder, smoked paprika, salt, and black pepper. Ensure they are evenly coated.

      Cook the Cornbread: In a medium bowl, combine the cornbread mix, buttermilk, half of the melted butter, and ¼ cup of honey. Stir until just combined – do not overmix. Pour half of the cornbread batter into the bottom of the prepared baking dish to create a base layer.

        Layer the Chicken: Place the seasoned chicken breasts over the cornbread layer. Make sure they are evenly spaced out for even cooking.

          Add Corn and Cheese: Sprinkle the corn kernels evenly over the chicken breasts. Then, add the shredded cheddar cheese on top of the corn.
