1 large egg (at room temperature)

1 tablespoon Dijon mustard

1 tablespoon white wine vinegar or lemon juice

1 cup neutral oil (such as canola or grapeseed)

1/2 teaspoon salt (or to taste)

A pinch of ground white pepper (optional)

Instructions
 

In a medium-sized mixing bowl, combine the large egg, Dijon mustard, and vinegar (or lemon juice). Use an immersion blender or a whisk to mix them thoroughly until well combined.

    With the blender running, or while whisking rapidly, slowly drizzle in the neutral oil. Start with just a few drops at a time, allowing the mixture to emulsify and thicken before adding more oil. Aim for a consistent flow, but keep it slow to maintain the emulsion.

      After about half of the oil has been added and the mixture is thickening, you can pour the oil in a slightly faster stream. Keep blending or whisking until all the oil is fully incorporated and the mayo has reached your desired thickness.

        Season the mayonnaise with salt and ground white pepper to taste. Adjust the acidity with more vinegar or lemon juice, if preferred.

          Transfer the mayonnaise to a clean, airtight container and store it in the refrigerator. Use within one week for the best flavor and quality.
