Ingredients

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (230g) button mushrooms, sliced

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 tbsp olive oil

2 tbsp unsalted butter

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 oz (225g) egg noodles or pasta of choice

Instructions

Cook the Pasta: Begin by cooking the egg noodles according to package instructions. Drain and set aside.

Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and season with salt, pepper, and paprika. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté Vegetables: In the same skillet, melt the butter. Add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent. Then add the sliced mushrooms and continue to cook until they are tender, about 5 minutes.

Make the Sauce: Return the cooked chicken to the skillet. Pour in the chicken broth, Worcestershire sauce, and Dijon mustard. Stir to combine and let it simmer for 5 minutes to reduce slightly.

Add Sour Cream: Lower the heat and stir in the sour cream until fully incorporated. Cook for an additional 2-3 minutes, making sure it does not boil.

Combine with Pasta: Add the cooked egg noodles to the skillet and toss to combine, ensuring the noodles are coated with the creamy sauce. Adjust seasoning with salt and pepper to taste.

Serve: Garnish with chopped parsley and serve hot.
