2 cups packed brown sugar

1/2 cup corn syrup

1 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon baking soda

Pop the Popcorn: Start by popping the popcorn kernels using an air popper or on the stovetop. If using the stovetop, heat a large pot with a tablespoon of oil, add the kernels, cover, and shake frequently until popping slows. Once done, transfer to a large mixing bowl and remove any unpopped kernels.

    Prepare the Caramel Sauce: In a medium saucepan over medium heat, melt the butter. Once fully melted, add the brown sugar, corn syrup, and salt. Stir until combined and bring to a gentle boil. Allow it to boil without stirring for about 4-5 minutes until it turns a deep amber color.

      Add Vanilla and Baking Soda: Remove the saucepan from heat, and quickly whisk in the vanilla extract and baking soda (careful, it will bubble up). This gives your caramel that delightful lightness and crunch.
