2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup unsalted butter, cold and cubed

1 cup buttermilk (substitute with 1 cup milk mixed with 1 tablespoon lemon juice or vinegar)

1 tablespoon honey (optional, for a hint of sweetness)

1 tablespoon fresh herbs (like thyme or chives), chopped (optional)

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs with small pea-sized pieces of butter.

        Add Buttermilk: Create a well in the center of the mixture and pour in the buttermilk and honey (if using). Fold the mixture together using a spatula or wooden spoon until just combined. Be careful not to overmix; the dough should be a bit shaggy and sticky.

          Knead Lightly: Turn the dough out onto a floured surface. Gently knead it a few times (3-4 times) to bring it together, adding flour as necessary to prevent sticking.

            Roll and Cut: Pat the dough into a rectangle about 1-inch thick. Use a floured biscuit cutter or a cup to cut out biscuits, pressing straight down without twisting to ensure they rise properly. Gather excess dough, pat down, and cut more biscuits.
