½ cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

1 large egg

½ cup plain yogurt (or buttermilk)

¼ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, if not in season)

Zest of 1 lemon (optional for added flavor)

Extra blueberries for topping (optional)

Coarse sugar for sprinkling (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the egg, then add the yogurt, vegetable oil, vanilla extract, and lemon zest (if using). Mix until smooth and fully combined.

        Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

          Add Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full. If desired, add additional blueberries on top and sprinkle with coarse sugar for a beautiful finish.
