6 cups thinly sliced apples (Granny Smith or Honeycrisp)

3/4 cup granulated sugar

1/4 cup brown sugar

2 tablespoons all-purpose flour

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon butter, cut into small pieces

1 package (14 oz) refrigerated pie crusts (or homemade if preferred)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Filling: In a large mixing bowl, combine the sliced apples with granulated sugar, brown sugar, flour, lemon juice, cinnamon, and nutmeg. Toss until the apples are well coated. Let sit for about 15 minutes to allow the flavors to meld.

      Roll Out the Crust: On a lightly floured surface, unroll one pie crust and fit it into a 9-inch pie dish. Make sure to press the dough gently against the bottom and sides.

        Add the Filling: Pour the apple mixture into the prepared pie crust, spreading it evenly. Dot the filling with small pieces of butter for added richness.

          Top Crust: Roll out the second pie crust and place it over the apple filling. Crimp the edges together to seal the pie. Cut a few slits in the top crust to allow steam to escape.
