Ingredients

For the Apple Fritters:

2 medium apples (such as Granny Smith), peeled, cored, and diced

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup granulated sugar

1 large egg

1/2 cup whole milk

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

1/2 cup powdered sugar (for dusting, optional)

Oil for frying (vegetable or canola)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

A pinch of cinnamon (optional)

Instructions

Prepare the Apples: In a medium bowl, combine the diced apples with 1 tablespoon of granulated sugar and 1 teaspoon of cinnamon. Toss and set aside to let the apples release some juices.

Make the Dough: In a large mixing bowl, sift together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, salt, and remaining granulated sugar. In another bowl, whisk the egg, milk, vanilla extract, and melted butter until combined.

Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir just until combined. Fold in the prepared apples, ensuring they're evenly distributed throughout the batter.

Heat the Oil: In a deep pot or fryer, heat about 2-3 inches of oil to 350°F (175°C). You can test the oil's readiness by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Donuts: Using a spoon or a doughnut cutter, carefully drop small balls of batter (about the size of a golf ball) into the hot oil, frying 3-4 at a time to avoid overcrowding. Fry each fritter for about 3-4 minutes on one side until golden brown, then flip and fry the other side for another 2-3 minutes.

Drain the Fritters: Once fried, use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil. Repeat until all batter is cooked.

Prepare the Glaze: In a small bowl, mix together 1 cup of powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. If desired, add a pinch of cinnamon.

Glaze the Donuts: Once the fritters have cooled slightly, dip the top of each fritter into the glaze or drizzle the glaze over them. For added sweetness, dust with powdered sugar before serving.

Serve: Allow the glaze to set for a few minutes before serving. Enjoy your warm, homemade apple fritter donuts with a hot cup of coffee or tea!
