8 oz (225g) flat rice noodles

1 lb (450g) beef sirloin, thinly sliced

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 bell pepper, sliced (red or yellow)

1 cup snap peas or snow peas

4 green onions, chopped

2 tablespoons hoisin sauce

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sesame seeds, for garnish (optional)

Prepare the Noodles: Soak the flat rice noodles in hot water for about 15 minutes or until tender. Drain and set aside.

    Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon of soy sauce, a splash of pepper, and a teaspoon of cornstarch (if desired for added texture). Let it marinate for about 15 minutes while you prepare the other ingredients.
