1 lb ground beef

4 medium-sized potatoes, thinly sliced

1 medium onion, diced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (15 oz) diced tomatoes with green chilies (undrained)

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Olive oil (for cooking)

Preheat Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground beef, breaking it apart with a spatula. Season with garlic powder, onion powder, paprika, salt, and pepper. Cook until fully browned and no longer pink, about 6-8 minutes. Drain any excess grease.

      Prepare Vegetables: In the same skillet, add the diced onion. Cook for 3-4 minutes until translucent and fragrant. Stir in the frozen mixed vegetables and cook for another 2-3 minutes until warmed through.

        Combine Ingredients: Add the canned diced tomatoes (with their juice) to the skillet with the beef and vegetables. Stir well to combine all the ingredients evenly.

          Layer the Casserole: In a greased 9x13-inch baking dish, layer half of the sliced potatoes to cover the bottom. Spoon half of the beef and vegetable mixture over the potatoes. Sprinkle a layer of shredded cheddar cheese on top. Repeat the layers with the remaining potatoes, beef mixture, and cheese, finishing with a final layer of cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the potatoes are tender and the cheese is bubbly and golden.
