Hobo Casserole Ground Beef Recipe

Ingredients
  

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

3 medium potatoes, sliced thin

2 carrots, sliced

1 cup green beans (fresh or frozen)

1 can (15 oz) diced tomatoes

1 cup beef broth

1 tsp Worcestershire sauce

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef along with the chopped onion and minced garlic until the meat is cooked through. Drain excess grease if necessary.

      In a large mixing bowl, combine the sliced potatoes, carrots, green beans, cooked beef mixture, diced tomatoes (with juice), beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir until well combined.

        Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.

          Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

            After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese on top of the casserole.

              Return the casserole to the oven and bake uncovered for an additional 15 minutes, or until the cheese is bubbly and golden.

                Remove from the oven and let it cool slightly. Garnish with fresh parsley before serving.
