Ingredients

4 cups all-purpose flour

1 packet (2 ¼ teaspoons) instant yeast

1 teaspoon sugar

1 teaspoon salt

1 ½ cups warm water (about 110°F or 43°C)

1/4 cup olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese

1 egg (for egg wash)

Sea salt (for sprinkling)

Instructions

Prepare the Dough: In a large mixing bowl, combine warm water, sugar, and instant yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients: Add the flour, salt, and olive oil to the yeast mixture. Stir until just combined. Knead the dough on a floured surface for about 8-10 minutes until it’s smooth and elastic.

First Rise: Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Prepare Herb Mixture: In a bowl, mix the minced garlic, chopped rosemary, thyme, parsley, red pepper flakes (if using), and Parmesan cheese. Set aside.

Roll Out Dough: After the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a rectangle about 1/2 inch thick.

Add Filling: Spread the herb and garlic mixture evenly over the rolled-out dough, leaving a small border around the edges.

Form the Rolls: Starting from one long end, tightly roll the dough into a log shape. Pinch the seam to seal.

Cut into Rolls: Using a sharp knife, slice the rolled dough into 10-12 equal pieces.

Second Rise: Place the rolls in a greased baking dish, cover with a cloth, and let rise for another 30 minutes.

Preheat Oven: While the rolls are rising, preheat your oven to 375°F (190°C).

Prepare Egg Wash: Beat the egg in a small bowl and brush it over the tops of the rolls for a golden finish. Sprinkle a pinch of sea salt on top.

Bake: Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

Cool and Serve: Let the rolls cool slightly in the pan before serving. Enjoy warm with butter or as a delightful side to any meal!
