1 pound ground beef (or a mix of beef and pork)

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, chopped

4 cups beef broth

1 can (14.5 ounces) diced tomatoes, with juices

1 cup green beans, trimmed and cut into pieces

1 bay leaf

Fresh parsley, chopped (for garnish)

Instructions
 

Make the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, smoked paprika, salt, and pepper. Mix until just combined. Form the mixture into 1-inch meatballs and set aside.

    Brown the Meatballs: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the meatballs in batches and brown them on all sides for about 5-7 minutes. Remove the meatballs from the pot and set aside.

      Sauté the Vegetables: In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-6 minutes until the vegetables begin to soften.

        Simmer the Stew: Return the browned meatballs to the pot. Pour in the beef broth and add the diced tomatoes with their juices, green beans, and bay leaf. Stir to combine, then bring the mixture to a gentle simmer.

          Cook the Stew: Cover and let the stew simmer for about 30-40 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
