Ingredients

1 cup almond flour

1/4 cup coconut flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese

1/2 cup chopped cooked bacon or sausage (or plant-based alternative)

1/4 cup finely chopped green onions

2 large eggs

1/4 cup unsweetened almond milk

2 tablespoons olive oil or melted coconut oil

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, coconut flour, baking powder, baking soda, garlic powder, onion powder, salt, black pepper, and grated Parmesan cheese. Whisk until well combined.

Prepare Wet Ingredients: In a separate bowl, whisk together the eggs, almond milk, and olive oil until fully combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Use a spatula to stir until just mixed. Do not overmix.

Add Fillings: Fold in the cooked bacon (or sausage), and chopped green onions. Ensure even distribution within the cookie dough.

Shape Cookies: Spoon the dough onto the prepared baking sheet, shaping each into a round cookie about 2 inches in diameter. Flatten each cookie slightly with the back of the spoon.

Bake: Bake in the preheated oven for about 15-20 minutes or until the cookies are golden brown and firm to the touch.

Cool and Enjoy: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or store in an airtight container for up to a week.
