1 cup grated zucchini (about 1 medium zucchini)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup maple syrup or honey

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (optional)

1/4 cup chopped nuts (such as walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard muffin tin with muffin liners or lightly grease with cooking spray.

    Prep Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This step is crucial to prevent overly wet muffins.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, and salt until well combined.

        Combine Wet Ingredients: In another bowl, mix the maple syrup (or honey), applesauce, eggs, and vanilla extract until fully combined.

          Combine Mixtures: Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

            Fold in Zucchini & Extras: Gently fold in the grated zucchini. If using, fold in the chocolate chips and chopped nuts.

              Fill Muffin Tin: Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

                Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

                  Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
