Ingredients

2 cups rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (70% cocoa or higher)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Optional: 1/2 teaspoon cinnamon

Instructions

Preheat Your Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch (or 9x9 inch) baking dish with parchment paper for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, salt, and cinnamon (if using). Stir until well mixed.

Combine Wet Ingredients: In another bowl, whisk together almond butter, honey or maple syrup, applesauce, and vanilla extract until smooth and creamy.

Combine Mixtures: Slowly pour the wet mixture into the dry mixture. Stir until the ingredients are fully combined and form a thick batter. If the mixture is too dry, you can add a splash of almond milk or water to reach a more cohesive texture.

Add Chocolate Chips and Nuts: Gently fold in the dark chocolate chips and chopped nuts (if using) until evenly distributed.

Spread the Batter: Transfer the batter to the lined baking dish and spread it evenly with a spatula, pressing down firmly to create a packed layer.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool and Cut: Remove the baking dish from the oven and let it cool in the pan for at least 10 minutes. Once cooled, lift the bars out using the parchment paper and cut into squares or rectangles.

Store: These bars can be stored in an airtight container at room temperature for a week or refrigerated for longer freshness. You can also freeze them for up to 3 months.
