2 boneless, skinless chicken breasts

1 cup fresh pineapple chunks (or canned)

1/2 cup BBQ sauce (preferably Hawaiian-style)

1/2 red bell pepper, sliced

1/2 green bell pepper, sliced

1 small onion, sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated (optional)

2 green onions, chopped (for garnish)

Salt and pepper to taste

Aluminum foil

Instructions
 

Preheat the Grill: Preheat your grill to medium heat (about 375°F or 190°C). If you're using an oven, preheat it to 400°F (200°C).

    Prepare the Chicken: Pat the chicken breasts dry with paper towels and season them with salt and pepper. In a mixing bowl, combine the BBQ sauce, minced garlic, and grated ginger (if using). Coat the chicken breasts in the BBQ mixture, ensuring they are well covered.

      Assemble the Foil Packets: Cut two large sheets of aluminum foil, roughly 12x12 inches. Place half of the sliced onions and bell peppers in the center of each sheet. Add half of the chicken breasts on top of the veggies, then top with half of the pineapple chunks. Drizzle more BBQ sauce over the chicken and pineapple if desired.

        Seal the Packets: Bring up the sides of the foil and fold them together to create a sealed pouch. Ensure there are no holes for juices to escape. Repeat with the second packet.

          Cook on the Grill: Place the foil packets directly on the grill grates. Grill for about 25-30 minutes, turning once halfway through the cooking time. If you're using an oven, place the packets on a baking sheet and bake for 25-30 minutes.

            Check for Doneness: After the cooking time, carefully remove the packets from the grill or oven. Open one carefully (watch out for steam) to check if the chicken is cooked through (internal temperature should reach 165°F or 75°C). If needed, seal and return to the heat for a few more minutes.

              Serve: Once fully cooked, carefully open the packets and let the steam escape. Garnish with chopped green onions before serving. Enjoy your tropical feast straight from the packets or serve over rice for a complete meal!
