Hatch Chili Turkey Breakfast Wraps

1 cup cooked turkey, shredded (leftover or deli turkey)

1 cup Hatch green chiles, roasted and chopped (canned or fresh)

4 large eggs

1/4 cup milk

1/2 cup shredded pepper jack cheese

4 whole wheat tortillas (10-inch)

1 small onion, diced

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sliced avocado (optional)

Instructions
 

Prep the Ingredients: If you’re using fresh Hatch chiles, roast them over an open flame until the skin is charred. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes. Peel off the skins, remove seeds, and chop.

    Cook the Onions: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until they become translucent.

      Add Turkey and Chiles: Mix in the shredded turkey and the chopped Hatch chiles. Sauté together for another 2-3 minutes until everything is heated through. Season with salt and pepper to taste.

        Make the Eggs: In a medium bowl, whisk together the eggs and milk. Pour the egg mixture into the skillet with the turkey and chiles. Cook gently, stirring occasionally, until the eggs are fully set but still creamy. Add in the shredded pepper jack cheese and stir until it melts and combines.

          Assemble the Wraps: Place a portion of the turkey and egg mixture onto the center of each tortilla. If you like, add slices of avocado. Fold the sides of the tortilla over the filling and roll it up tightly, starting from the bottom up.

            Toast the Wraps (Optional): For extra crunch, place the wraps seam-side down in a dry skillet over medium heat. Toast for about 2 minutes on each side until golden brown.

              Serve and Garnish: Slice each wrap in half and serve with chopped fresh cilantro sprinkled on top. You can also add your favorite salsa on the side for an extra kick!
